Özet

Bu çalışmada, ülkemizde ve dünyada popüler olan nane çayı, iki farklı nane türünden (Mentha spicata L. ve Mentha piperita L.) üretilmiş ve limon tozu eklenerek instant bir çay formu geliştirilmiştir. Bu amaçla nane ve limon ekstraktları, püskürtmeli kurutma yöntemi kullanılarak toz haline getirilmiş, ardından uygun formülasyonlarla karıştırılarak nane-limon çayı üretilmiştir. Çalışma boyunca fiziksel, biyokimyasal, spektrofotometrik, kromatografik ve duyusal analiz yöntemleri kullanılarak ürünlerin özellikleri incelenmiştir. Limonlu instant çaylarda toplam fenolik madde miktarı M. spicata için 41,74 mg GAE/gr, M. piperita için 42,63 mg GAE/gr olarak belirlenmiştir. Limon tozu eklenmesi fenolik madde miktarını bir miktar düşürmüştür. Limonlu instant çayların antioksidan kapasiteleri EC değerleri, M. spicata için 4,16 gr örnek/gr DPPH, M. piperita için 2,96 gr örnek/gr DPPH olarak hesaplanmıştır. TEAC değerleri ise sırasıyla 121,94 ve 155,3 mg TEAC/gr örnek olarak tespit edilmiştir. Limonlu instant çaylarda M. spicata'da rosmarinik asit (11,13 mg/gr) ve M. piperita'da eriositrin (33,54 mg/gr) ana fenolik bileşikler olarak öne çıktığı saptanmıştır. 20°C'de 6 aylık depolama sonunda çayların biyoaktif özelliklerini ve duyusal niteliklerini büyük ölçüde koruduğu, genel beğeni puanlarının 7'nin üzerinde olduğu görülmüştür. Sonuç olarak, püskürtmeli kurutma yöntemi ile üretilen instant nane-limon çayları hem sağlık açısından faydalı bileşenler içermekte hem de tüketicilere pratik bir kullanım sunmaktadır. Bu çaylar, uzun raf ömrü ve duyusal nitelikleri sayesinde yenilikçi bir ürün olarak değerlendirilebilir.

In this study, a popular herbal tea, mint tea, was produced using two different mint species (Mentha spicata L. and Mentha piperita L.) and developed into an instant tea form by adding lemon powder. For this purpose, mint and lemon extracts were converted into powder using the spray drying method and then mixed with appropriate formulations to produce mint-lemon tea. Throughout the study, physical, biochemical, spectrophotometric, chromatographic, and sensory analysis methods were employed to examine the properties of the products. The total phenolic content of the lemon-flavored instant teas was determined to be 41.74 mg GAE/g for M. spicata and 42.63 mg GAE/g for M. piperita. The addition of lemon powder slightly reduced the phenolic content. The antioxidant capacities of the lemon-flavored instant teas were measured as EC values of 4.16 g sample/g DPPH for M. spicata and 2.96 g sample/g DPPH for M. piperita. The TEAC values were determined as 121.94 and 155.3 mg TEAC/g sample, respectively. Rosmarinic acid (11.13 mg/g) in M. spicata and eriocitrin (33.54 mg/g) in M. piperita were identified as the main phenolic compounds in the lemon-flavored instant teas. After six months of storage at 20°C, the teas were found to largely retain their bioactive properties and sensory qualities, with overall acceptability scores above 7. In conclusion, instant mint-lemon teas produced using the spray drying method not only contain health-beneficial components but also offer consumers a convenient usage option. These teas can be considered innovative products due to their long shelf life and sensory qualities.
