Özet
TÜRKÇE ABSTRAKT (En fazla 250 sözcük) Uluslararası turizm hareketlerine paralel olarak ülkemizde de gelişmeye devam eden turizmin önemi artık tüm kesimler tarafindan kabul edilmektedir; Ancak turizmişletmelerinde de bazı temel yönetim ilkelerine uyulma zorunluluğu var dır. Bu konuda yapı ve işlevleri itibarıyla diğer sanayi işletmelerinden zaten geri kalmış olan otel işletmeleri, modern yönetim ilkelerini uygulamaları halin de ülkedeki turizmi hem kalite hemde kapasite yönünden arttıracaklardır. Otel işletmeleri tüm yönetim fonksiyonlarını uygulamak ve işletmeyi karlılık açısından olumlu noktalara taşımak amacıyla ellerinde stok bulundururiar. Bu stoklar otel işletmeleri için hem önemli bir kaynak, hemde amaçların gerçekleş mesi için bir araçtır. Bu nedenle otel işletmeleri, modem anlayış çerçevesinde geleceğe dötıök piatı ve programlarını yaparken stok yönetim organizasyonlarına da yer vermek durumundadırlar. Amaç müşteri tatmini ve talebin anında karşılanması oldu ğuna göre işletme içinde oluşturulacak bir stok yönetiminin bunu sağlayacak şekilde organizasyonu kaçınılmazdır. Otel işletmelerinde karlılığı arttırmanın en önemli faktörlerinden birisi de maliyetleri kontrol altında tutabilmektir. Uygun bir karlılık için stok maliyet lerinin en düşük seviyede tutulması gereklidir. En uygun maliyette en uygun siparişi vermekle mümkündür. Ekonomik Sipariş Miktarını belirleme çaba ları hep maliyeti düşük tutmak amacım güder. Etkin bir stok yönetimi ve kontrolü yapan otel işletmeleri tüm bu faaliyetleri tek elden organize ederler. Görevler ve sorumluluklar ayrıntılı ve net bir biçimde belirlenir. Böylece otel yönetiminin alacağı yeni kararlar ve yatırımlar daha net ortaya çıkar. Bu, ülke ekonomisine ve turizm sektörüne daha çok katkıyı ifade eder. Bu çalışmamızda stok yönetiminin önemi ve maliyetleri incelenmiş, işletme ler açısından Ekonomik Sipariş Miktarının hesaplanmasına ve otel yönetimi nin bazı temel yönetim ilkeleri uygulamalarına yer verilmiş ve stok maliyetle rinin hesaplanmasıyla ilgili örnekler verilerek konu açıklanmaya çalışılmıştır.

İNGİLİZCE ABSTRAKT (En fazla 250 sözcük) Today, the importance of tourism is clear and understood by everybody as it is developing in our country in parallel with the international tourist activities in the other countries. So we should know enough about several basic management principles of the Hotel management and tourist industry the hotel industry whinh is less developet than most of the other industries and newly developing in Turkey will contribute a lot to bot the quality and quanlity of the tourist activities by our putting those basic principles in to practice. The hotel managers, practising all of the necessary management functions, have stocks in order render the enterprise to get a higher income and be able to give much better service. And also, through these stocks, they can reach their goals easier,because these stocks are really a significant source to the satisfying service. Well, the hotel managers, thus, have to take it into consideration to plan a stock management organazation while they are planning their goals in a modern way. It's indispensable to organize a stock management to reach the goals, because it's the most important thing for a hotel to gire good service to please the costo- mers in order to reach these goals,and this is impossible without stocks. One of the most important ways of increasing the income of the hotel is to control the expenditures. It is necassary to keep the expenditures of stocks in the Lowest Level in order to have a reasonable income, It's only possible to earn more by giving the best amount of goods to stock Trying to give the most economical stock- order is to Lower the cost of stocks. The hotel managers who have an efficient organization and control of stocks organize everthing by a central system. The duties and responsibilities of the staff should be indicated clearly and in detail Thus, the new decision on the investment becomes more to both the economy of the country and the tourism industry. In this research, we have tried to make clear that it is very important in hotel management to organize and plan the stock management ; and also both the importance of the cost of stocks and the practice of several basic principles of hotel management are mentionet.
