Özet
ÖZET Topçu Ayaz A., Bazı sebzelerin nitrat ve nitrit miktarları ve ıspanakta bekletme, pişirme ve dondurmanın nitrat ve nitrit içeriğine etkisi üzerine bir araştırma, Hacettepe Üniversitesi Sağlık Bilimleri Enstitüsü Beslenme ve Diyetetik Programı Doktora Tezi, Ankara, 2003. Araştırmada domates, havuç, marul, kıvırcık, aysberg, maydanoz ve ıspanak olmak üzere Ankara piyasasında satışa sunulan yedi çeşit sebzenin nitrat ve nitrit miktarları saptanmıştır. Ispanağa bekletme (buzdolabında açık ve kapalı ortamda bekletme), pişirme (susuz, suda, ön haşlama) ve depolama (-18 °C'de 6 ay) işlemleri uygulanarak nitrat ve nitrit miktarlarında oluşan değişimler incelenmiştir. Araştırma sonucunda yaş ağırlık üzerinden en yüksek nitrat içeriğine sahip olan sebzeler sırasıyla; maydanoz (1513.36 mg/kg), ıspanak (1456.04 mg/kg), kıvırcık (1 042.8 lmg/kg), marul (914.22 mg/kg), aysberg (623.38 mg/kg), havuç (190.03 mg/kg) ve domates (11.06 mg/kg) olarak saptanmıştır. Araştırma sonucunda yaş ağırlık üzerinden en yüksek nitrit içeriğine sahip olan sebzeler sırasıyla; ıspanak (2.31 mg/kg); maydanoz (1.78 mg/kg); kıvırcık (0.98 mg/kg); aysberg (0.92 mg/kg); marul (0.84 mg/kg); havuç (0.65 mg/kg) ve domates (0.36 mg/kg) olarak belirlenmiştir. Ispanaklara uygulanan farklı işlemlerin nitrat ve nitrit içeriğine etkisi incelendiğinde, yıkama işleminin ıspanakların kuru ağırlıktaki nitrat ve nitrit değerlerini etkilemediği bulunmuştur (p>0.05). Açık ortamda bekletilen ıspanakların kuru ağırlıktaki nitrat değerlerinde %7.3'lük, kapalı ortamda bekletilenlerde ise %9.7'lik bir artış saptanmış ancak bu artışlar istatistiksel açıdan önemli bulunmamıştır (p>0.05). Açık ortamda bekletilen ıspanakların kuru ağırlıktaki nitrit değerlerinde azalma (p<0.05), kapalı ortamda bekletilenlerde ise artış saptanmıştır (p>0.05). Açık ve kapalı ortamlarda bekletilmiş ıspanakların kuru ağırlıktaki nitrit miktarları arasındaki farklılık istatistiksel olarak önemli bulunmuştur (p<0.05). Susuz pişirme ile kuru ağırlıktaki nitrat miktarlarında %17.7'lik bir artış saptanırken (p>0.05), nitrit miktarlarında %40.0'lık bir azalma (p>0.05) belirlenmiştir. Suda pişirme ile kuru ağırlıktaki nitrat ve nitrit miktarlarında ise azalma saptanmıştır (p<0.05). Susuz ve suda pişmiş ıspanakların nitrat ve nitrit miktarları arasındaki farklılık önemli (p<0.05) bulunmuştur. Ön haşlama ve 6 ay -18 °C'de depolama işlemleri sonucunda kuru ağırlıktaki nitrat ve nitrit miktarlarının azaldığı saptanmıştır (p<0.05). Ön haşlama ve birbirini takip eden 6 ay depolama süresince nitrat ve nitrit içerikleri arasındaki farklılık ise önemsiz (p>0.05) bulunmuştur. Araştırmadan elde edilen veriler; (i) ıspanak ve marul için bulunan nitrat miktarlarının, Türk Gıda Kodeksi yönetmeliğin'de belirlenen değerlerin altında bulunduğunu (ii) nitrat suda çözünen bir bileşik olduğu için yıkama ile nitrat miktarının bir miktar azaldığını (p>0.05), (iii) susuz pişirme ile nitrat miktarının arttığını (p>0.05), nitrat suda çözünen bir bileşik olduğu için suda pişirme ile azaldığını (p<0.05) (iv) susuz pişirme (p>0.05) ve suda pişirme ile nitrit miktarlarının azaldığını (p<0.05) (v) buzdolabında açık ve kapalı ortamlarda bekletme ile kuru ağırlıktaki nitrat miktarları arasında önemli bir farklılık olmadığını (p>0.05), ancak açık ortamda bekletilen ıspanakların nitrit içeriğinin azaldığını (p<0.05), (vı) sebzelerin nitrat ve nitrit içeriğinin dondurarak depolama süresince değişmediğini ortaya koymuştur.

VI ABSTRACT Topçu Ayaz, A., The nitrate and nitrite levels of some vegetables and the effect of storage, cooking and freezing on the nitrate and nitrite contents of spinach. Hacettepe University Health Science Institute PhD Thesis In Nutrition and Dietetics, Ankara, 2003. In this study the nitrate and nitrite contents of 7 different vegetables sold at wholesale fruit and vegetables market in Ankara, namely tomatoe, carrot, leaf lettuce, head lettuce, iceberg, parsley and spinach were determined. The effects of storage (both aerobic and anaerobic conditions in refrigerator), cooking (without water, with water, blanch) and freezing (six months' at -18 °C) on the levels of nitrate and nitrite were studied. At the end of the study, it was found that parsley (1513.36 mg/kg), spinach (1456.04 mg/kg), head lettuce (1042.81 mg/kg), leaf lettuce (914.22 mg/kg), iceberg (623.38 mg/kg), carrot (190.03 mg/kg) and tomatoe (1 1.06 mg/kg) had the highest contents of nitrate in fresh weight, while spinach (2.31 mg/kg), parsley (1.78 mg/kg), head lettuce (0.98 mg/kg), iceberg (0.92 mg/kg), leaf lettuce (0.84 mg/kg), carrot (0.65 mg/kg) and tomatoe (0.36 mg/kg) had the highest contents of nitrite in fresh weight. When the effects that different processes applied to spinach had on the levels of nitrate and nitrite were examined, it was found that, washing had no effect on the levels of nitrate and nitrite in dry weight of spinach (p>0.05). It was found that there was an increase by 7.3 % and 9.7 % in the levels of nitrate in dry matter of spinach stored in aerobic and anaerobic conditions respectively. However these increases were not statistically significant (p>0.05). It was found that there was a decrease in the levels of nitrite in dry matter of spinach stored in aerobic conditions (p<0.0.5) while there was an increase in the levels of nitrite in dry matter of spinach stored in anaerobic conditions ( p>0.05). The differences between the nitrite levels of dry matter of spinach in stored aerobic and anaerobic conditions were statistically significant (p<0.05). It was found that, there was an increase by 17.7 % in the content of nitrate (p>0.05) in dry matter of spinach apposed to the decrease by 40.0% in the levels of nitrite (p<0.05) when spinach cooked without water. There was a decrease in the levels of nitrate and nitrite in dry matter (p<0.05) when it was cooked with water. It's found that, the differences between the levels of nitrate in spinach cooked with water as apposed to those in spinach cooked without water and the levels of nitrite in spinach cooked with water as apposed to those in spinach cooked without water were statistically significant (p<0.05). At the end of the processes of blanching and freezing in a 6 months' period at -18 °C, the decrease in the levels of both nitrate and nitrite, when compared to the results obtained from washing process were statistically significant (p<0.05). By contrast the difference between the levels of nitrate and nitrite following 6 months' storage and the levels of nitrate and nitrite after blanching were not statistically significant (p>0.05). in conclusion; (i) the levels of nitrate in spinach and lettuce were below the maximum levels determined by the Turkish Food Codex, (ii) there was a decrease in the amount of nitrate in spinach, due to the fact that nitrate is a compound that leaches into the washing water (p>0.05), (iii) an increase in the amount of nitrate was observed when spinach was cooked without water. This was due to leaching into the cooking water (p<0.05). (iv) there was a decrease in the amount of nitrite when spinach is cooked both with water ( p<0.05) and without water (p>0.05). (v) the difference in the levels of nitrate in spinach following storage in the refrigerator in aerobic and anaerobic conditions were not statistically significant (p>0.05), but a decrease was observed in the levels of nitrite in spinach stored in aerobic conditions (p<0.05). There was no change in the levels of nitrate and nitrite in vegetables during freezing.
