Özet
ABSTRAKT Marmara bölgesinde yaygın olarak kullanılan 4 farklı tip (quanset çelik hangar, kagir ambar, polietilenle örtülü yığın ve çelik silo) buğday deposundaki depolama koşulları saptanmış ve bu koşullarda depo lanan buğdayların fiziksel, biyokimyasal, mikrobiyolojik ve fonksiyo nel özelliklerinde oluşan değişmeler incelenmiştir. Daha sonra depola ma koşulları ile depolama esnasında buğdaylarda meydana gelen kalite değişimlerinin, buğdayların ekmekçilik kalitelerine etkileri belirlen miştir. ABSTRACT In 4 different types of wheat stores (quanset steel flat bin, stone warehouse, polyethylene covering over ground bulk grain, steel silo) that are widely used in the Marmara Region, the existing stora ge conditions were studied and the changes in the physical, biochemi cal, microbiological and functional properties of the stored wheat under these conditions assessed. Also, the effects of these conditions as well as the quality changes incurred during storage on the baking properties of the wheat samples were determined. -xi-
