Özet
Bu cahsmada; Tokat ili ve ilcelerinde faaliyet gosteren gida sanayi isletmelerinin mevcut durumu, faaliyetleri ve sorunlan arastinlmistir. Arastirmanin amacina uygun olarak belirlenen bes sektorde 40 gida sanayi isletmesi basit tesadufi ornekleme yontemi ile secilirken, sayica az olan isletmelerde tarn sayim uygulanmistir.Gida sanayi isletmelerinden verilerin toplanmasi asamasinda anket yontemi kullanilmis olup isletmelerden analiz sonucu belirlenen degerler, sektorler itibariyle isletmeler ortalamasi seklinde ortaya konulmustur. tsletmelerin hukuki yapilan, sahip oldugu alan, mulkiyet durumu, yan kurulus bilgileri, yatinm tesviklerinden yararlanma durumu, kredi kullanim durumu, sosyal faaliyetlerin bulunma durumu, isletmecilerin yas, egitim ve deneyim durumu, isletmelerin teknolojik yapi ve uretim, istihdam, hammadde temini ve pazarlama yapisi ile ilgili bilgiler isletme kayitlan ve gorusmelerden yararlamlarakeldeedilmistir.Arastirmada incelenen gida sanayi isletmelerinde kapasite kullanim oranlan; et ve et urunleri sanayinde %27, sut ve sut urunleri sanayinde %57,1, meyve ve sebze isleme sanayinde %45,8, seker sanayinde %100, un sanayinde ise %48,6 olarak bulunmustur.Incelenen gida sanayi isletmelerinde toplam 2 379 kisi istihdam edilmekte olup bunun %2,1'i et ve et urunleri sanayinde , %5,6'si sut ve sut urunleri sanayinde, %24'u sebze ve meyve isleme sanayinde, %44,8'i seker sanayinde, %23,5'i ise un sanayinde istihdam edilmektedir.

In this study, the problems, activities and the present condition of the food industry enterprises in Tokat have been examined. While the 40 industry enterprises of five sectors that have been determined in accord to the objective of the research have been chosen by the method of simple coincidental illustration, with the enterprises that are less in number the complete enumeration method has bee applied.In the stage of data collection from the food industry enterprises, the questionnaire method has been applied. The results have been explained as the average of enterprises for each sectors. The knowledge related to the legal construction of the enterprises, the amount of the area that the enterprises own, the condition of possession, the knowledge of secondary institutions, the utilization of the measures of investment encouragement by the enterprises, the case of credit use, the occasion of the existence of the social activities, administrators?conditions of age, education and experience, the technological structure, manufacture, employment, the assurance of raw material and marketing construction have been picked u p from t h e registrations of t h e enterprises and t h e interviews. The findings of the research have been arranged as follows:The rates of capacity use of food industry enterprises that have been searched in the research district have been found out as: in the meat and meat products industry %27, in the milk and milk products industry %57,1, in the Industry of fruit and vegetable treating %45,8, in the sugar industry %100, and in the flour industry %48,6In the food industry enterprises that have been searched, 2 379 people have been employed in total. The %2,1 of the total in meat and meat products industry, %5,6 in milk and milk products industry, the %24,0 in fruit and vegetable treating industry, the %44,8 in sugar industry, the %23,5 in flour industry have been employed.
