Özet

Biofilms are a constant source of contamination on food contact surfaces in the food industry and play a role in transfer of pathogens, primarily Salmonella, posing serious health problems. In this study, biofilm formation of Salmonella serovars Enteritidis and Typhimurium on polystyrene microtiter plates, stainless steel (SS), and polypropylene (PP) coupons as well as eradication of preformed Salmonella biofilms using peracetic acid (PAA) and sodium hypochlorite (SH) disinfectants and silicon dioxide (SiO2) and titanium dioxide (TiO₂) nanoparticles was examined. All 21 Salmonella isolates produced biofilm on coupons. SH treatment with MIC and sub-MIC at 1 and 5 minutes on SS and PP coupons showed a ≥3 log reduction in biofilms of all isolates (3 to 6 log). The reduction in PAA on SS and PP coupons at MIC and ½ MIC for 1 and 5 minutes was between 0.3-5.2 log and 0.1-6.5 log, respectively, indicating statistical significance (P ≤ 0.001). SiO₂ (0.2-3.8 log) and TiO₂ (0.1-5.1 log) at tested concentrations and times on PP showed a decrease of 1 log or more (>90% reduction) in approximately half of the isolates. SiO₂ (0.1-2.1 log) and TiO₂ (0.1 3.6 log) with MIC and ½ MIC for 5 minutes on SS were more effective, showing a 1 log or more reduction (>90%) than for 1 minute. There was no statistically significant difference between results of SiO₂ and TiO₂ nanoparticles at all concentrations and exposure times (P > 0.05). This study contributes to understanding biofilm formation and developing methods for controlling and effectively eliminating biofilms.
