Özet
Bu çalışma, 2019 yılında Karadeniz Bölgesi, Doğu Karadeniz Bölümü'nde bulunan, Artvin, Rize, Trabzon ve Giresun illerindeki 42 yaş çay işleme tesisinin yöneticileriyle yüz yüze anket çalışması yapılarak gerçekleştirilmiştir. Araştırmanın sonuçlarına göre; tesislerde yılda toplam 918000 t yaş çay işlenmekte, toplamda 8102 personel çalışmaktadır. Tesislerin % 67'si, 90-120 gün arası 24 saat çalışarak tam kapasite ile faaliyet göstermektedir. Her tesiste en az bir mühendis bulunup, istihdam edilen personelin % 88,4'ünü vasıfsız işçiler oluşturmaktadır. Çay sektöründe, kamu ve özel sektöre ait firmalar etkin olup bir tesis yıllık ortalama olarak 21860 t yaş çay işlemektedir. Tesisler ürün tedarikini büyük oranda sözleşmeli üretim yoluyla gerçekleştirmekte, yetiştiricilere genelde vadeli ödeme yapmaktadır. Tesislerin % 76'sı çaykur, % 24'ü ortodoks yöntemiyle işleme yapmakta olup, 7 farklı nevide çay üretilmektedir. Ayrıca çalışmada incelenen rotervanın, ürün kalitesine istatistiksel olarak (P≥0.01) etki yapmadığı görülüp, enerji tüketimi ve işleme süresi bakımından sisteme avantaj sağladığı tespit edilmiştir.

This study was carried out in 2019 by conducting a face-to-face survey with the managers of 42-year-old tea processing facilities in the provinces of Artvin, Rize, Trabzon and Giresun, located in the Black Sea Region, Eastern Black Sea Region. According to the results of the research; A total of 918000 t of fresh tea is processed annually at the facilities, and a total of 8102 personnel work. 67% of the facilities operate at full capacity, working 24 hours between 90-120 days. There is at least one engineer in each facility, and 88.4% of the employed personnel are unskilled workers. In the tea sector, public and private companies are active and one facility processes 21860 t of fresh tea annually on average. The facilities mostly realize their product procurement through contracted production and generally make deferred payments to the farmers. 76% of the facilities process Çaykur, 24% using the orthodox method, and 7 different types of tea are produced. In addition, it was observed that the roterva examined in the study did not have a statistically (P≥0.01) effect on the product quality and provided an advantage to the system in terms of energy consumption and processing time.
