Dr. Murat Erol In this study, extraction conditions of water-soaking plant material were studied and mathematical model was developed. For this reason that dried plum was choised and leaching process was carried out in five batch and each batch was repeated five times. The extraction experiments were studied at different temperatures (50°C, 60°C, 70°C), shaking velocity (low and high) and surface are conditions (whole and half dimension). Plum/water ratio was 1/5 (w/w)iv and the equilibrium was reached in five hours» By taking the samples in each batch, brix wax measured during extraction to analyse the change in brix and extraction yield. At the stage of mathematical modelling, the rate of mass transfer was firstly determined at whole and half dimensions by using“Marquardt nonlinear regression analysis”. The amount of water hold by the plum tissues was determined in each batch and the model was developed. Dif ferential model equations were solved by using“4. order Runge-Kutta Method”and computer programme. According to the results, extraction yield increased by decreasing the plum dimension and increasing the shaking velocity. Temperature, has little effect on the extraction yield. Experimental yields are the range of 59.697.-93.53°/. and the yields of mathematical model are the range of 38. 13'/. -93. 75"/.. The highest yield (93.537.) occured at half dimension and high shaking velocity. At the low shaking velocity, the yield of mathematical model is 107. more than that of experimental results with the expection of the model which occured at 50°C and whole dimension. In addition results of model and experiment have a parallel trend. These results indicated similarity with Spitanos et al. (1979), Gentscev et al. (1991), Aguilera et al. (1989).
