Özet
Tavuk yumurtası protein değeri yüksek, önemli bir besin maddesidir. Ülkemiz tavuk yumurtası üretiminde üst sıralarda yer almaktadır. Fakat ülkemizde kişi başı tavuk yumurtası tüketimi, çoğu gelişmiş ülkenin kişi başı tüketiminden daha azdır. Bu da bazı üretim ve pazarlama sorunlarını beraberinde getirmektedir. Bu tez çalışmasında tavuk yumurtası üretim işletmelerinin karşılaştıkları üretim ve pazarlama sorunları, literatür incelemesi ve Çorum İli ölçeğinde tavuk yumurtası üretim işletmesi yetkilileriyle yapılan anket çalışmasıyla tespit edilmeye çalışılmıştır. Bu araştırma sonucunda gözlemlenen üretim ve pazarlama sorunlarının çözümüne yönelik, bilimsel veriler ışığında bazı çözüm önerileri getirilmiştir. Bu tez çalışması beş bölümden oluşmaktadır. Çalışmanın birinci bölümünde; çalışmanın amacının, öneminin, yönteminin ve organizasyonun ortaya konduğu giriş bölümüdür. Çalışmanın ikinci bölümünde literatür incelemesi yapılmıştır. Bu bölümde; üretim, pazarlama, üretim ve pazarlama arayüzü, üretim ve pazarlama sorunları, Dünya, Türkiye ve Çorum İlinde yumurta üretimi konuları ele alınmıştır. Ayrıca üretim ve pazarlama sorunlarını ele alan literatür kısaca incelenmiştir. Çalışmanın üçüncü bölümünde araştırmanın metodolojisi ele alınmıştır. Bu bölümde; çalışma için verilerin nasıl toplandığı hakkında bilgi verilmiştir. Verilerin toplanması için yapılan anket çalışmasının sorularının nasıl hazırlandığı, anakütlesi ve örneklemi nasıl belirlendiği belirtilmiştir. Ayrıca anket çalışmasının uygulanması süreci kısaca değerlendirilmiştir. Çalışmanın dördüncü bölümünde araştırma bulguları değerlendirilmiştir. Bu bölümde; araştırmaya katılan işletmelerin durumu hakkında genel bilgiler verilmiş ve elde edilen bulgular ışığında Çorum İlinde faaliyet gösteren tavuk yumurtası üretim işletmelerinin üretim ve pazarlama durumları hakkında elde edilen araştırma sonuçları belirtilmiştir. Beşinci bölüm ise araştırma bulgularının değerlendirildiği ve bunun sonucuna göre Çorum İlinde faaliyet gösteren tavuk yumurtası üretim işletmelerinin gözlemlenen sorunlarına yönelik bilimsel veriler ışında çözüm önerileri getirilmiştir.

Chicken egg is an important nutrient which is rich in protein. Our country comes at the top of the chicken egg production. But per capita egg consumption in our country is less than many developed countries. This situation causes some production and marketing problems as well. Within this study, both production and marketing problems which chicken egg production companies face have been studied through a questionnaire which has been conducted on the representatives of egg companies across Province of Corum and through a literature review. Finally, some recommendations have been proposed to the production and marketing problems within the light of scientific data. This thesis study consists of five parts. The first part of the study is the introduction part which contains purpose, importance, procedure and organization of this study. Literature review has been put forward in the second part of the study. In this part; production, marketing, interface of production and marketing, problems of production and marketing, matters of chicken egg production in State Corum, Turkey, and in the world are issued. Additionally, the literature which mentions about production and marketing problems is reviewed. In the third part of the study, the methodology is studied. Data collection is considered in this part of the study. Sampling and groundmass of the study, and how the questionnaire questions prepared are studied in this part. Moreover, application time of the questionnaire is briefly evaluated. In the fourth part of the study, findings are assessed. In this part, general information about the companies which attended to the study is given, and research results are stated to the chicken egg production companies' production and marketing issues in Province of Corum in the light of gathered data. The fifth part is the part which the findings are assessed; and according to the findings of the study, solutions are offered to the companies that runs chicken egg production business in Province of Çorum in the light of scientific data.
