Özet
KONUT MUTFAĞI VE ENDÜSTRİLEŞMESİ ÖZET Kültür ve uygarlık yaratabilen tek canlı varlıklar olarak insanlar, yaşadıktan her dönemde beslenmek için türlü teknikler geliştirmişler, besini kolay edinebildikleri ve üretebildikleri yerlerde yaşamlarını zenginleştiren diğer uğraşlar ile ilgilenme ve geliştirme şansına sahip olmuşlardır. İnsanın yaşamsal evrimi ile etkileşim içinde olan mutfak mekanı kültür ve uygarlığın ulaştığı her noktada, geldiği her boyutta, içinde bulunulan mevcut imkan ve ihtiyaçlara göre anlam kazanmış, şekillenmiş ve gelişmiştir. Toplumun eriştiği çağdaş yaşam tarzı, evlerimizin planlama anlayışım ve giderek bu planlama içerisindeki ünitelerin biçimini ve konumunu da etkilemektedir.Modern toplumun bireyleri artık mutfağı bir yemek hazırlama laboratuarı olarak görmemektedir. Mutfak değişen yeni anlamına uygun olarak güncel yaşamın sürdüğü bir yaşama mekanıdır. Bu tez çalışmasının amacı; konut mutfağı endüstrisinin ulaştığı noktayı incelemek, yapılan analiz çalışmaları ile Türkiye'deki ithal ve yerli hazır mutfak firmalarının ekonomik ve teknik yapılan hakkında karşılaştırmalı sonuçlara ulaşmaktır. Çalışma giriş ve sonuç bölümleri dahil yedi bölümden oluşmaktadır. Tezin giriş bölümünü içeren birinci bölümünde, mutfak mekanının ve ekipmanlannın değişmesine etki eden unsurlar üzerinde durulmuş ve bileşen ölçeğinde endüstrileşmiş mutfak üretimimn sağladığı avantajlar belirtilmiştir. Günümüzün değişen ekonomik ve sosyal şartlannda mutfağın konut içinde kazandığı önemden bahsedilmektedir. İkinci bölümde, konut mutfağı kısaca tanımlandıktan sonra, insanların beslenme ihtiyaçlanmn giderilmesi için biçimlenen mekanlar olarak mutfağın ortaya çıkışından bahsedilmektedir. Endüstrileşme hareketinden önce ve günümüzde mutfakta yer alan eylemlerin ve ekipmanlara karşılaştırmalan yapılmaktadır. Günümüz yaşam koşullan sebebiyle mutfakta onaya çıkan ihtiyaçlar ve bu ihtiyaçların karşılanabilmesi için mutfağın yeni bir boyut, alan ve düzenler kazandığından söz edilmektedir. Üçüncü bölümde, konut mutfaklanmn fiziksel analizi yapılmaktadır.Mutfağın olması gereken ideal büyüklüğü, bakması gereken ve sakınılması gereken yönler ve konutun diğer mekanlan ile eylemsel ilişkileri anlatılmaktadır. Aynca konut yapımında ekonomiyi sağlamak ve gürültü faktörünü azaltmak için konutta tesisat birliğinin IXsağlanması gerektiğinden bahsedilmekte, sağlıklı bir mutfak mekanı oluşturmak üzere ergonomi ve kullanıcıların antropometrik yapılan ile ilgili olması gerekli fiziksel boyutlar anlatılmaktadır. Kullanışa, yani içindeki fonksiyonlara göre konut mutfak tipleri ve plan şemalarına, yani içindeki tezgahın biçimlenişine göre konut mutfak tipleri incelenmekte ve bunların birbirlerine göre avantajları ve dezavantajları anlatılmaktadır. Dördüncü bölümde ise, konut mutfağının endüstrileşmesini destekleyen unsurlar üzerinde durulmaktadır. Bunun için öncelikle endüstri devrimi ve her alandaki etkileri anlatılmakta, konutun endüstrileşmesi neticesinde de mutfak mekanının ne şekilde değiştiği ifade edilmektedir. Ayrıca modern hayatın ve teknolojinin etkisiyle değişen ihtiyaçların mutfak mekanına kazandırdığı yeni anlam ve boyutlar belirtilmektedir. Beşinci bölümde, her türlü mutfak ekipmanının günümüzde ulaştığı teknolojik yapı anlatılmaktadır. Ankastre olarak üretilen mutfak cihazlarının çeşitliliğinden, performanslarından, estetik yapılarından ve kullanımda sağladıktan kolaylıklardan bahsederek, yemek pişirmeyi keyifli bir uğraş haline getirdikleri ifade edilmektedir. Altıncı bölümde, Türkiye'deki ithal ve yerli hazır mutfak firmalan ile ilgili bir analiz çalışması yer almaktadır. Bu çalışmanın amacı, ülkemizdeki hazır mutfak firmalarının üretim sistemleri, çalışma şekilleri, teknik ve ekonomik yapılan ve standartlan hakkında karşılaştırmalı sonuçlara ulaşmak; mutfak bileşenlerinin malzemeleri, boyutlan ve birleşim noktalan ile ilgili bilgiler elde etmektir. Yedinci ve son bölüm olan sonuç bölümünde ise hazır mutfak endüstrisinin günümüzde sahip olduğu yapı ve kullanıcıların mutfak ekipman ve bileşenlerinden beklentileri tartışılıp sonuçlandırmıştır.

RESIDENTIAL KITCHEN AND INDUSTRIALIZATION SUMMARY Human beings as the only living beings that can create a culture and civilization have developed various techniques for nourishment at every area they lived and they had the chance to get pleasure out of and develop other works, which will make then- lives wealthier where they obtained and grow nourishment. The place of kitchen, which has an interaction with the vital evolution of the human being, has gained a meaning, shaped and developed according to existing opportunities and needs at every point to which culture and civilization reached and at each dimension it has survived. Contemporary way of life to which the society has reached, is affecting the understanding of planning at our residences and gradually the shape and location of the units in such planning. The members of the modern society do not consider the kitchens as laboratories for cooking meals anymore. Kitchen, in convenience with its changed meaning, is a living place where the daily life is led. The purpose of this thesis; is to review the point to which residential kitchen industry has reached to obtain the compared results regarding the economic and technical structures of the imported and domestic ready-made kitchen companies in Turkey through the analysis carried out. The study is composed of seven sections including the introduction and conclusion sections. In the first section including the introduction of the thesis, the components affecting the variation in kitchens and kitchen equipments have been emphasized and the advantages brought by the industrialized kitchen production have been explained under the component criterion. The importance, which the kitchens gained in the residences based on the changing economic and social conditions of our life, has been discussed. Under the second section, following a brief definition of the residential kitchen, the appearance of the kitchen as the places shaped to overcome the nourishment needs of the human beings has been discussed. The comparison between the operations and equipments that were in the kitchens before the industrialization act and are in nowadays is made. It is being discussed that the kitchens have gained a new dimension, field and system in order to meet the requirements, which have arisen due to the living conditions of our day. XIUnder the third section, physical analysis of the residential kitchens is made. The ideal bigness of the kitchen, the directions it has to be directed and avoided and operational relations with other places of the residence has been explained. Furthermore, it is discussed that the unity of the installation system has to be secured in the building in order to ensure the economic structure and to decrease the noise factor. The anthropometrical structures of the users and physical dimensions that should be related thereto and the ergonomics for the purpose of forming a well- planned kitchen have been discussed. Residential kitchen types are being reviewed in respect of their way of using, in other words their functions and their projects, in other words the shape of the counter and their advantages and disadvantages are being explained through comparison. Under forth section, the components supporting the industrialization of the residential kitchens have been emphasized Therefore, first the industrial revolution and its effects in each field are explained, and then the manner of change in the kitchens as a result of industrialization of the residences are stated. Furthermore, new meaning and dimensions brought to kitchens by the changing needs through the effect of the modern life and technology are explained. Under fifth section, the technological structure reached by any kind of kitchen equipments is explained. The variety, performances, esthetic structure of the kitchen equipment produced as embedded equipments and easiness they provide in utilization has been explained and it is stated that they make the cooking a pleasant work. Under sixth section, there is an analysis regarding the imported and domestic ready- made kitchen companies in Turkey. The purpose of such study is to reach compared results regarding the production systems, way of working, techniques and economic structures and standards of the ready-made kitchen companies in our country; and to obtain information about the materials of kitchen components, dimensions and connection points. Conclusion section, which is the seventh and last section, is brought to a conclusion through discussing the structure of the ready-made kitchen industry and the expectations of the users from kitchen equipments and components.
