Özet
Gastronomi turizmi, destinasyona özgü yiyecek ve içeceklerin deneyimlenmesi yoluyla yerel mutfak mirasının tanıtıldığı ve bu sayede turistlerin seyahat motivasyonlarının şekillendiği bir turizm türü olarak tanımlanmaktadır. Bu bağlamda, yerel mutfak kültürünün etkin biçimde sunulması, destinasyon imajının güçlenmesine, turist memnuniyetinin artmasına ve tekrar ziyaret etme olasılığının yükselmesine katkı sağlamaktadır. Bu yüksek lisans tezinin temel amacı, Trabzon ilinde ikamet eden yerel halkın gastronomi turizmine yönelik algı ve farkındalık düzeylerini belirleyerek bu iki değişken arasındaki bağlantıyı analiz etmektir. Hedeflenen bu amaç doğrultusunda, kapsamlı bir literatür taraması yapılarak kuramsal çerçeve oluşturulmuş ve iki ana hipotez içeren bir araştırma modeli geliştirilmiştir. Araştırma evrenini, 2024-2025 yılı boyunca Trabzon ilinde ikamet eden bireyler oluşturmaktadır. Veri toplama sürecinde üç bölümden oluşan bir anket formu kullanılmış ve bu anket çevrim içi ortamda katılımcılara sunulmuştur. Toplam 402 geçerli yanıt analiz sürecine dahil edilmiştir. Verilerin analizi, SPSS 20 istatistiksel paket programı aracılığıyla gerçekleştirilmiş olup, frekans dağılımı, faktör analizi, korelasyon ve basit doğrusal regresyon testlerinden yararlanılmıştır. Bulgular, yerel halkın gastronomi turizmine yönelik algısının genel olarak olumlu olduğunu, farkındalık düzeyinin ise orta seviyede olduğunu ortaya koymuştur. Bunun yanı sıra, algı ile farkındalık değişkenleri arasında olumlu yönlü, anlamlı ve orta seviyede bir ilişki bulunduğu belirlenmiştir. Bu bulgular doğrultusunda, Trabzon ilinde gastronomi turizminin sürdürülebilir gelişimini desteklemek amacıyla, yerel katılımı artırmaya ve farkındalık düzeyini yükseltmeye yönelik çeşitli politika ve uygulama önerileri sunulmuştur.

Gastronomy tourism has emerged as a form of tourism in which local culinary heritage is promoted through the experience of destination-specific food and beverages, thereby shaping tourists‟ travel motivations. In this context, the effective presentation of local culinary culture contributes to strengthening the destination image, increasing tourist satisfaction, and enhancing the likelihood of repeat visits. The primary objective of this master‟s thesis is to determine the levels of perception and awareness of the local population residing in the province of Trabzon regarding gastronomy tourism, and to analyze the relationship between these two variables. In line with this aim, a comprehensive literature review was conducted to establish the theoretical framework, and a research model consisting of two main hypotheses was developed. The research population consists of individuals residing in Trabzon throughout the 2024–2025 period. During the data collection process, a questionnaire form consisting of three sections was utilized, and the survey was administered online to participants. A total of 402 valid responses were included in the analysis. Data were analyzed using the SPSS 20 statistical software package, and frequency distribution, factor analysis, correlation, and simple linear regression tests were employed. The findings revealed that the local population generally holds a positive perception of gastronomy tourism, while their level of awareness was found to be moderate. Furthermore, a positive, statistically significant, and moderate-level relationship was identified between the perception and awareness variables. Based on these findings, several policy and practice recommendations were proposed to support the sustainable development of gastronomy tourism in Trabzon by enhancing local participation and increasing awareness levels.
